You don't have to forget your goals just because of America's greatest sporting event of the year, the Super Bowl! Instead, be prepared with some healthy recipes for the celebration. To help you out, I'm sharing some of my favorite guilt-free snack foods.
Carrot Fries
Just a few ingredients for these tasty, low carb fries; carrot sticks, olive oil, herbs de provence, salt and pepper
Directions:
1. Preheat oven to 400 degrees
2. In a mixing bowl, drizzle olive oil on top of carrots, then massage until oil is coated on the carrot sticks (I use about 1 whole tbsp)
3. Then sprinkle herbs de provence over carrots, plus a couple shakes of salt/pepper, massage again
4. Lay out tin foil on a baking pan then spread out carrot sticks evenly
5. Bake for 45 minutes to 1 hour
6. Cool then serve
Simple Guacamole
Ingredients:
3 avocados (make sure soft/ready to mash), 1/4 cup red onion (diced), 1/4 cup roma tomatoes (diced), 1/4 cup cilantro leaves (chopped/no stems), 1 jalapeno (chopped), a couple shakes of salt/pepper, 1-3 squeezed limes
Directions:
1. Using a knife or avocado tool, slice avocados in half and toss out the pits! Remove the skin and mash avocados until the consistency is smooth. If you like some substance, leave some chunks
2. Then add the rest of the ingredients; red onion, roma tomatoes, cilantro leaves, jalapeno, fresh squeezed limes and salt/pepper
3. Mash/mix everything together
4. Serve with veggies or multigrain chips
Sweet Potato Bites
Ingredients:
3-4 large sweet potatoes, olive oil spray, salt/pepper and toppings of choice
Directions:
1. Preheat oven to 450 degrees
2. Rinse and slice sweet potatoes into thicker medallions
3. Lay tin foil on a baking pan and then spread out sweet potato slices
4. Spray with olive oil and dash with salt/pepper
5. Bake for 45 minutes
6. Add toppings of choice; Here I chose smoked nova salmon, avocado, peanut butter with coconut and chopped walnuts and almond butter and banana. You can make them sweet or savory
Bell Pepper Nachos!
Ingredients:
1 pound lean ground turkey, 3/4 cup fresh salsa, 1 cup reduced fat cheese or dairy free cheese, 3 bell peppers and a couple shakes of chili powder, cumin, salt and pepper
Directions:
1. Preheat oven to 375 degrees
2. Rinse bell peppers and remove seeds/core
3. Cut into vertical pieces, like mini canoes
4. Cook ground turkey over medium-high heat, breaking up as it cooks. The goal is to get rid of any pinkness, that's how you know the meat is cooked through
5. Mix cooked turkey with spices and salsa
6. Fill mixture in bell pepper boats and drizzle with cheese
7. Line baking sheet with parchment paper and bake for 10-15 minutes or until cheese is melted
8. Top with avocado, 0% Fage Greek yogurt, sliced green onions, etc.
